VINO Y SE QUEDÓ
We threw caution to the wind and turned what began as the adventure of two wine enthusiasts into a life-shaping mission: to rescue and preserve vineyards at risk of abandonment in the Sierra de Gredos. What started out as a passion soon became a hands-on commitment to the land, working closely with old vines and dedicating all our efforts to improving the soil.
First and foremost, we aim to create wines that we love ourselves – honest, vibrant, light but full of character – highlighting the potential of high-altitude Garnacha and sharing the unique identity of this remarkable landscape with the world.

Who We Are

Cristian Martín Mouat
Winegrower & Winemaker
With the mindset of an engineer, Cristian, Chilean–Catalan rooted IT Specialist, is driven by constant curiosity. Always asking ‘Why?’ He challenges assumptions and seeks better solutions. His analytical approach and restless spirit turn questions into progress – because true improvement starts with questioning everything. He’s convinced that drinking better wine makes you make better wine.

Doreen Auerbach
Winegrower & Winemaker
Doreen, inspired the name of the project – she came (vino) and never left (y se quedó). Of German heritage, but with her heart firmly entwined with Spain, she has a background in economics and has always been drawn to numbers. Yet it was her passion for Garnacha that changed her life, enticing her away from a corporate career of 20 years in Barcelona to be closer to the vineyards, devoting herself to these historic, old vines.
